I’ve never had fermented coco or chocolate before, does it taste much different from the traditional cacao powders?

Very,very similar. Just a bit more earthy and start off slow, may cause your tummy to rumble!!

So, what does 'fermented' mean regarding chocolate? What is the process?

You should know that ALL COCOA /CACAO beans are fermented as one of the steps in the preparation of the finished product. This has been true since time immemorial, and it is still true. Whether this company has added some additional special process of fermentation (I doubt it), or whether they are simply capitalizing on the public's interest in fermented products by pointing out the way cocoa/chocolate is made by EVERYBODY, I don't know. I will say this is an especially delicious cocoa, however.

Where is this originally manufactured ?

The Organic Fermented Cacao ingredient was manufactured in Peru and the finished product was packaged at our facility in the US.

So, the cacao is not roasted?

No, it is not roasted. I believe it was fermented in yeasts, lactic acid, etc. But the powder isn’t roasted.
