Is the part that touches the food stainless steel or aluminum?

The entire wok is stainless steel except the outer bottom casing that houses the electrical heating element, so, stainless steel is all that touches the food. I use this wok about 4 times a week... love it.

What is the highest temperature it will cook?

It heats oil to no higher than 350, as measured on a candy thermometer. The temperature control goes to 400, but oil does NOT heat to deep frying temperature.

How long is the electric cord?

30 inches; but I add a 6 foot heavy duty extension cord.

does this work for deep-frying and for cooking curries?

I am sorry but I have never deep-fried anything and I don't know anything about cooking curries. I have used it to quickly cook meat (like strips of beef) or vegetables to serve over rice. It works great - is a very simple device.
