The owl is known to frequent the olive trees of Cortijo el Puerto during the night, so it lended its visage to the label of this 100% organic Koroneiki extra virgin olive oil. The green olives produce an oil of medium intensity with aromas of apple, tomato, a touch of cinnamon and spices, and even hazelnut and walnut. In the mouth it begins sweet with an aftertaste of dried fruit and olive leaf. The balance arrives with a medium amount of bitterness and clear sensation of pungency in the throat. The oils is lovely with roasted eggplant, zucchini, and other vegetables, white fish and seafood, and also strong flavored cheeses like feta and blue cheese. It also pairs well with Greek yogurt, and can be used for making mayonnaise.
