where can where can I buy the screws and bolts for these? These need to be for a high temperature ovens. Not gonna find them in a home depot store.

Home Depot. The bolts are all steel. I doubt your oven does 1500 degrees! I use them in my powder coat oven at 400 degree F and have no problems. Just use normal steel bolts and not plastic fasteners.

How often does the wheels need to be grease and what is the prefer high temp grease is available ?

If you are using these for baking food then use a food grade hi-temp grease. Lubri-max brand high performance grease is a good option. You will know when the wheels need to be greased as they will begin to squeak especially when they are still hot. It's good preventative maintenance to grease the wheel after 4-5 cycles in the oven.
