I'm 215lbs. Will these stay up?

No, they do not stay up. I ended up gettting a garter belt to hold them in place.

I am 5ft inches tall what size should I wear?

Well, based on your height, I might go with small or medium, but it really depends on your inseam length, waist size, and your seat and leg size. Using those measurements, I recommend that you use the size chart provided by the manufacturerl to ensure you buy the perfect fit for you. I hope I have been helpful & hope you find the perfect fit.
