We use Thermolon ceramic nonstick coating. Thermolon does not contain any Nano particles. Accordingly, there is no possibility for Nano particles to leach into the food when cooking with GreenPan. **Q: I had it for less then a year and it sticks alot to the pan unlike the first month. I followed the instructions and want more information** A: Not had my saucepan long but so far so good. Follow instructions and always hand wash. **Q: Is it alright to cook on medium-high heat?** A: The non-stick surface of this pan is so good that I am reluctant to use it on fairly high heat in case it spoils it. The instructions say to avoid high heat. It is fine on medium heat, that causes no problems. I have another frying pan of a similar size whose non-stick coating does not perform as well so I use that for high-temperature frying when I need that. I use silicone spatulas, they work well on this pan. I hope you enjoy this pan, I love it, it’s fantastic for omelettes and much more. **Q: I have read reviews which state aluminium in the ceramic pans? where is the aluminium as I thought 100% toxin free?** A: It lists aluminium among the materials.
