The pan I was looking for
I knew this a was a crude looking skillet beforehand and that is not a factor of my review.The handle works well to keep cool and provide a good grip. The lack of rivets, the feature I searched to end up at this product, is a deal maker although I have no idea on the longevity of this pan handle. The non-stick is amazing right now, more on that in a moment. The outer pan area was marred up a bit. Nothing horrendous, just noticeable, again, I don't care and did not expect better because I am an informed consumer as much as possible.Let's talk about the non-stick: It's simply the best of many I've tried. I put some oil in there, heated it up to temp, dropped 6 eggs in it and hard fried them all, and they all slid out of pan without any effort. I've got a couple of dozen pans and none of them has ever had this kind of release, the eggs were extremely loose in the pan. My 10 1/4" cast iron comes close sometimes. I am aware that this is because the ceramic coatings are usually filled in with silicone. If you are not aware, silicone has a rather low temp point, after which it will come out of the ceramic and make your pan sticky again. I will not be cooking up at high temps with this and that should never be an issue. If you wish to cook high temp, I suggest heavy research into the subject.More stuff: The pan takes a long time to heat up. I was very surprised. I've got nothing comparatively heavy of aluminum to compare it with, but this took far longer to heat than I expected, that comes with the caveat that it will take far longer to de-heat as well -- the temp response coefficient of this pan is not high. I run a gas stove with a high output burner that will put this thing up to heat relatively quickly, but on my other burners it takes a while, it still doesn't cool down quickly, inertia and all that, and on a smaller burner the center will buckle so don't do that.Overall this was a good purchase thus far (I've made far more than indicated above at this time). Time will tell the true tale here... and so will I if time gives me the lie.2018-12-14This is my go to pan. I break this thing out for eggs or steaks, doesn't matter. Despite my previous comment, I've run this thing on my high output burner at just below medium-high numerous times, it's been through the dishwasher numerous times, and it still has no stick. There is clearly an improvement over the old ceramic non-sticks. I just cooked taco meat tonight, rinsed it, and cooked refried beans in it just after, no sticking. Still doesn't "require" oil, but I put some in there so that the pan doesn't get overly hot and retain enough heat to damage itself - oil is a heat transfer medium if you did not understand its primary purpose in cooking. Using nonstick without it is inviting chemical pollution into your food due to your pan overheating. Lower the heat and use some oil.

Best nonstick I ever used cleaning ridiculously simple
Wanted a high quality professional nonstick pan chefs use, did some research and found this brand, searched my favorite Amazon, bought 2 at great price. You need nothing oil or butter and I don’t think you could get anything to stick to this thing even if you wanted to. To clean it you can literally run it under low pressure water in your sink and everything falls out of it. The bottom the pans natural finish scuffs and scratches slightly from my heavy duty gas Thermador grates but that is absolutely not an issue. I bought two 10 inch and will get a 14 or 12 inch soon. By no means am I a professional chef but home cook that is learning and I have spent Tons of money on high quality pans that don’t work even 20% as good as this one. Vollrath is great and Amazon even better!

The bottom not quite flat
We bought, long time ago, two high quality Vollrath fry pans and they were good. But over time, in the 12" pan, the center of bottom has raised and the oil pool on the edges. I have search for replacement and find out, reading reviews, that it is quite common problem in fry pans. Finally I have chosen the EZ4012 model, made by Vollrath, because it had good revives and no one had mention the raised bottom problem.When it arrived, I observed, that the new one has already the center of bottom raised. I had made measurement and find out that the old one, after several years of usage, has convex dome 0.1" high, but the new one 0.08". Maybe it is not a big problem, but my wife is not happy.One more thing. Currently on the picture the pan color is brownish. We get the pan with the black coating inside and aluminum outside. It looks like on the picture of the EZ4010 model.

Great pan, if you need non-stick this is the way to go.
My original Z4012 model was beginning to stick after nearly two years of daily home use. This is a far better life of any fry pan I have ever experienced. I checked Amazon and found there are now two models, the Z4012 and the EZ4012. In looking over the stats, the only difference I could make out was the lack of rivets inside the pan of the EZ model. Pulled the trigger on the EZ and found that it is nearly identical to the other model. I weighed them and they weigh the same 3 pounds 2.6 ounces. That is right these are heavy, flat pans. I use them on our glass cooktop. In reading up on care and use, I will stop using cooking spray on this pan to see if it lasts longer. Now to keep the kids from using metal in them...

One major flaw and safety concern
Good pan except for the handle construction. Rivets all fell off within a couple months of purchase. Handle came off while my wife was holding it--could have ended very badly! I was refused a refund.

My favorite brand
My first Vollrath lasted for 20 years. I bought my self a new one,not because I needed it I wanted a new one. My friend has my old ine snd she loves it. I just bought one for my nieces she is moving into her first apt on her own. What could be a better gift than a Vollrath. She will use it for years to come.

The HOLY GRAIL of non-stick pans!
The holy grail of pans in my opinion. I take very good care of this pan and it still performs like brand new months later. This pan can cook eggs, chicken breast, and everything else I have thrown at it with NO oil. Everyone is always in disbelief when I show them but this thing is the best pan I have ever used.Allow it to cool a bit before washing and don't use anything too abrasive on it and it will last for years to come!

Great so far.
Nice pan, nice size, oven proof silicone handle too. I use it 4-5 times a week and it's been great so far but then, all new non sticks are great at first. I grew tired of replacing my main skillet every 12-15 months so I thought I'd give a commercial grade pan a try. If the coating outlasts other non sticks I've had in the past, it will have been money well spent.
