This is a heavy duty piece of linen to help get your bread loaves to stay in shape as they rise. It’s long enough for several baguettes or three large loaves of French bread. Flour it up well before you use it I also have a round and oval linen lined baskets for my bread. They are great

Q: Is this used instead of or inside a proofing basket?

I am not an experienced break maker, but I think the intention of this is to use instead of a proofing basket when shaping long skinny loaves. At least at the beginning, the cloth is very stiff and might not shape well inside a proofing basket. Maybe after it loosens up a little it would work for that.As the photo next to the product shows, if you curl the cloth up between loaves it will help them get the long shape while giving you the benefit of the linen cloth.

Q: May this be used to roll out pie dough, pizza crust...etc?

You will have lints getting into your pie or pizza dough. I only use this couche to proof French baquettes to keep them in a slim form so I never use them to roll or flatten the dough.
