A: I know right?  "Japanese Stainless" is so generic as to be useless.  440, 420, AUS-8, VG-1?  Even on her website it only says Japanese stainless made in China.  The total lack of steel info suggests you should steer wide of these as they're probably low quality knives with the Rachel Ray name slapped on to jack up the profits.
