I was sick and tired of stainless steel knives that I simply couldn't keep sharp, so I bought a 10" Mercer carving knife four years ago for carving roast beef. Four years later it is still razor sharp. This time I bought an 8" carving knife. I absolutely love it. It is just as sharp as the knives I bought from the German knife manufacturer in Solingen. It is well balanced, and solidly built. The price for the Mercer is about 1/4 of the price for the similar German knife. Absolutely great value for the money. I would give the German knives about 4 and a half stars. They are quite excellent. But if I could I would give the Mercer 6 stars.
