Is this set really useful why is rack better than putting items on bottom of inner pan? is it used to stack and separate two 2 layers in the fryer?

The taller rack is used for baking to allow more air flow under pan to brown the bottom of dish. The one with wavy shapes is used for cooking Kabobs . you should have gotten. 4 skewers to use with this rack.

Will this fit in the Cosori 6.8qt?

These are meant to fit the smaller fryer (3.7Qt) so yes, your bigger fryer (6.8Qt) will hold them easily. There are accessories that are made for the 6.8Qt fryer you have.

Will these work in the cosori af701-cs 7-quart air fryer oven?

This set seems to be for the smaller Cosori fryer. So yes, you could use it, but if you have the 7 qt fryer you can get the larger sized accessories for a better fit. Be sure to check sizes....some accessory sets are not very clear about the sizes they fit. I checked and double checked.
