Can 2 of theses motors be used in a go kart (200lbs load) at less than 5 MPH?

You should start with a larger motor. This is too small to use in a kart. Something like the G43-500 would be better suited. Whichever motor you use, make sure your reduction ratio is right. You want motors to operate at an RPM that is within their high-efficiency speed range.
