Review: Awesome sour dough flour! Only flour I use now. A bit pricey, but worth it. - This makes very good bread, and is excellent for gluten or wheat sensitive people like myself. I can eat this without any bloating or bad effects, and it works incredibly well in sour dough recipes. Like all whole wheat, it's baking with it is a bit heavy, but this flour gives a clean, silky feel to bread, and isn't as chunky as regular whole wheat.

## Questions & Answers

**Q: Is it spelt or wheat... it says both but picture shows wheat?**
A: This one is sprouted whole wheat.   They do have sprouted spelt also.

**Q: It says "95 percent organic sprouted whole wheat". Does that mean 5% is not sprouted or 5% is other ingredients?**
A: I'm not sure what that means!  The ingredients on my bag only say sprouted whole wheat flour--1 ingredient.  It makes wonderful bread--much lighter than the regular whole wheat--lighter.  I have used it for a long time and everyone loves the bread--I take to potluck every week.

**Q: What is the real carb count, 13 or 20? Some of the reviews say they got a different package with higher carbs.**
A: It's simple. Just take the total carbohydrate grams per serving and subtract the total fiber of said serving to give you the NET grams of carbohydrates that act on your body's physiology (to raise insulin levels, etc.).
Since they did not provide a copy of the label I cannot do it for you. But it goes like this: Let's say one serving provides 20 grams of carbohydrate and one serving also provides 7 grams of total fiber (both crude and dietary). The NET grams of carbohydrate then, is 13 grams. These are the biologically active grams that your body uses to produce energy.

**Q: If this is one 80 oz. bag then why does the listing say it is a 4-pack?**
A: I just wrote the company because it specifically says 80 oz case of 4. It is misleading if it does not come with 4 80oz packages

The best, healthy flour! I can't do regular American wheat flour because of inflammation, but this sprouted whole grain wheat flour works for me. The sprouting process removes some of the inflammatory elements. I mix it half and half with whole grain rye flour and make sourdough, then refrigerate the baked bread before eating to increase the resistant starch as much as possible. That makes a loaf I can eat without followup pain! It does make a dense loaf so keep that in mind. You won't get the high, fluffy rise of processed white flour, but it still bakes up a nice, flavorful, healthful bread. Do a long cold ferment to get the best flavor.
