Are these universal and should fit most multimeters.

I only bought the croc clip set, really strong spring, excellent. Plugs are standard 4mm dia with a long shroud and should fit a meter if the socket is set at the bottom of a deep recess. For a meter with a socket nearer the surface you'd need to trim the shroud. Leads themselves have nicely plasticised insulation- don't tend to drag the meter around too much!

how do you attach banana plugs to wires?

No they come in plastic bag and to be fair leads normally Would, you would keep them in multimeter case

Will thees fit fluke meters?

I don't use them for fluke but I can't see a reason why they wouldn't fit.
