122p is cardoid mic, 112p is omni

Q: What is the average distance these will still work well away from one another?

I work in my garage so I've never had any trouble with distance. 18 feet is comfortable enough, although I suspect it can possibly do three times that distance.

Q: Does this work with the canon hf r600?

Yes. It comes with the standard mini-headphone jack to connect to the camera. Will work with any camera that has an input for an external microphone.
