I've read most of the reviews; most favorable on performance. What comment do purchasers have for the long term; 6 months, 1 year?

I purchased this on Jan 5, 2013 and it's now Dec 19, 2022 and it still performs like new. I don't use it daily but will vacuum seal ~50ish packages of meat I process every year. Would definitely recommend.

how do you seal chicken?

We seal fresh chicken breasts, cooked chicken in various forms, chicken stock, and completed main (chicken) courses, for that matter ... Cut the bag to appropriate size and seal end. Put chicken inside. Press seal button ... Write "chicken" and date on end with sharpie and put in freezer.Maybe I don't understand your question. If you are referring to a WHOLE chicken, I wouldn't do that - you are sealing in air inside the cavity. Cut the chicken up first. if you want to seal something with a lot of juices or sauce, this sealer isn't the best choice, though you can do it. For liquids (chicken stock) and other things with a lot of liquid or sauce, we use an impulse sealer. An alternative would be to freeze the dish (or stock) first. We put up things like frozen chicken pot pies after we freeze them first. In fact, we freeze then seal them right in the pyrex over bowls!

Would the Pro-2300 work with the Foodsaver zipper bags via the Foodsaver zipper bag adapter?

What do you mean by "Foodsaver zipper bags via the Foodsaver zipper bag adapter"? Are you asking if you can use bags other than those specifically sold for the Weston?
