Yes you do need a peel to place the pizza in the oven and to remove/turn the pizza. The cheaper standard ones that Ooni sell are absolutely perfect. You don't need to spend money on the more expensive ones with handles.

What size pizza can you make roughly?

Hello a good 12 inch pizza. Big enough for an adult. You can also do garlic bread flat breads. You need to order at least 2 peels and also polenta works best in the peel to release the pizza!
