The Red Cabbage Powder is red, pink, or magenta in acids, (pH 7). For blue I'd recommend to slowly mix in an alkaline ingredient such as baking soda until your desired shade of blue is reached.

It'll depend on the desired concentration. A whole pack (1.76oz/50g) can technically color a whole gallon of water deeply red. The red cabbage powder dissolves very well, so you'll also be able to use an entire pack in just one glass of water if you're looking for a highly concentrated solution.

How will this work for red velvet cake?

A typical Red Velvet Cake would require chemical red soft gel paste food coloring, with our natural red cabbage powder you will achieve the same coloring effect. You can simply substitute traditional chemical food dye with the red cabbage powder. Start with 1 tsp per cup and slowly mix in more if you'd like a deeper red color. To get the red cabbage powder to dissolve faster, use a few drops of warm water.
