Is it ok to freeze it? does it lose the bacteria if frozen?

We generally recommend against freezing natto, since this negatively affects flavor and texture.

Freezing does reduce the total count of viable bacteria. We have seen that freezing and thawing under non-lab conditions will kill almost all the actively growing (“vegetative”) cells, although spores (protected dormant cells) remain mostly viable.

Practically speaking, we don't have clear evidence how the lower vegetative cell count would change the probiotic effect on the gut microbiome; it’s possible that the spore form may be responsible for most probiotic activity, but this hasn’t been shown clearly.

However, from a food safety perspective, the reduced activity of the living ferment in the jar could make it easier for other microbes to grow if they're introduced after the jar is opened, reducing shelf life.

From a broader nutritional perspective, freeze-thawing may have an adverse effect on nattokinase activity, but vitamins and minerals including Vitamin K2 should be unaffected.

All that said, our glass jars are quite sturdy and can be frozen directly. So if you were mainly interested in bacterial spores and/or Vitamin K2, are ok with the altered flavor and texture, and plan to finish the jar quickly, it could be fine!

What’s the sodium content?

There is absolutely no salt added to any of our nattos, so only negligible amounts of natural sodium from the soybeans.

how long can the unopened jar say fresh in refrigerator?

Think about 2 months is as long as we allowed it to be opened and used up. Not sure if that is what is recommended though.

Question 4

what is natto good for?  I am worried It can effect thyroid but my macrobiotic counselor says its good for thyroid any thoughts?

Natto is fermented so should be fine for thyroid (it’s non-fermented soy that could be a problem), but ask someone you trust, like a naturopath, not strangers. Why don’t you trust your macrobiotic counselor? I would.
