I read in other press releases this had more than 60hz refresh rate. Can someone verify that what is specified here is correct?

LG has not yet put out a Press Release that confirms any specifications for the LG 49" Class 32:9 UltraWide® Dual QHD IPS Curved LED Monitor (49" Diagonal), Model # 49WL95C-W and currently, any retailer that is advertising the monitor is only showing is as having a refresh rate of 60 Hz...^IFV

I see the resolution is 5120x1440, but what if my graphics card only supports a max of 3840x2160. Will the resolution on this LG then be 3840x1440?

When your card supports a max of something think of it like the number of pixels are the limit not so much the number of the width or height value 3840 x 2160 = 8294400 pixels whereas 5120x1440 = 7372800 which is bellow what your max is meaning you should be able to display that many pixels just fine.

Has anyone been able to get this working with a mac mini? (I have the 2018 mini model).

Yes, I connected mac mini 2012 via HDMI. Like Lobo already said if you need to get full support resolution 5120x1440 you need to have an external GPU. I had fully supported resolution by connected my macbookpro 2020 via USB-C.
