My water won’t turn off, it has to be done manually under the sink. Do I need a whole new unit?

Had the same problem (on hot side) and it was due to some deposits inside the plunger. Turn the water off, there is a nut on top of the lever which you can undo. I put some vinegar on for about 10 minutes; after a while the plunger popped up, and then I let it soak 10 more minutes. Put the lever back on an it works again. Bad design that if any thing goes wrong, like an o-ring, you have to replace the entire $400 faucet

what is the maximum temperature?

I have it set to the last "dot" before max, and an instant read thermometer reads 175-177 for water directly from the tap (into a mug). For comparison, I tested coffee that just finishing brewing, and that was about 172-175.

Can I use it for regular filtered water rather than boiling water?

The water runs through a hot water tank. I doubt it would work just for filtered water.
