How many casings are in the package?

It is a continuous casing you size your sausages has you like. Keep it moist and use a slower fill or it breaks. I did 6" links and got 25 with about half left over.

Are you supposed to soak these before stuffing?

DO NOT SOAK PRIOR. Water will deteriorate the casing

What are the casings made from?

Not sure, some vegetable protein. They cook up differently than natural casings.
