Does this have any tags that you can screw to the wall/ fence ?

No. I use an elastic bungee, pass it round the greenhouse and fasten it to the fence with hooks.

Can I use this to put my potted plants in during the winter to protect them from frost, assuming we get frost this winter.

Obviously the greenhouse is not heated. It would act the same as a cold frame. I have overwintered plants in mine before. They all survived. I was careful not to overwater as water freezes and harms the plants.

Can you take shelves out to allow for taller plants?

Yes you can they are all removable. I have done this for my tomato plants to grow up from the bottom.

Do I have to use all of the shelves for stability ?

No, but I fixed the unit to the fence for extra stability.
